Japanese hot veggie curry

I think I got a little bit carried away with all the veggies in tonight's curry...
Eggplant, mushrooms, zucchini, red and yukon gold potatoes, golden parsnips, carrots, onions and green pepper.

One completely full 7 quart pot.

Anybody want some? *g*

Have to pass -even virtual green peppers ruin it for me. I'll have to look for golden parsnips, though; I haven't seen those.

Our brown lentil curry last night had carrots, mushrooms, green beans, shallots, garlic, ginger, fresh coriander and snow peas, served with corn bread, so we are pretty close to even. I didn't measure but it will be a side dish tonight and I froze four more servings.

The night before we roasted purple carrots, red fingerling potatoes, golden beets and parsnips (we aren't vegetarians; that night there was pork tenderloin with pumpkin seed sauce too - we had mvt as a dinner guest).

I suspect we could find food we like together! Are you coming to FKO this year?

I won't make it to FKO, but I will be going to WorldCon in Montreal. Hope to see you there!

I noticed you announced you were coming. Let us know if you want to help with the filk track in any way.

Judging from Debbie Ohi's pictures, you were having a good time at Consonance. I so wanted to be there.
